Serving suggestions

Cook it a few minutes longer than your usual spaghetti. It's made for simple sauces where the pasta shines: cacio e pepe, aglio e olio, a slow tomato sauce, or brown butter and sage.

About the Maker

Poschiavo crafts exceptional, century-old artisan pastas from a historic mountain mill nestled 3,300 feet high in the Swiss Alps. Operating just north of Lombardy, Italy, the multi-generational family estate blends regional heritage with pristine high-altitude conditions. They mill non-GMO durum wheat entirely on-site, mixing the grain with fresh alpine spring water. By patiently air-drying each batch in an open attic for a full week, they achieve a remarkably firm, nutty noodle built to hold sauces beautifully.
