Serving suggestions

Rinse 1 cup of rice until the water runs mostly clear, then combine with 1¼ cups water and a pinch of salt. Bring to a boil, cover, and simmer on low for 15 minutes. Turn off the heat and let it rest, covered, for 10 minutes before fluffing. Serve with Thai green curry, garlicky stir-fried greens or teriyaki salmon, or chill leftovers overnight for the best fried rice. Add a can of coconut milk to make coconut rice, or use it in mango sticky rice.
