José Gourmet - Smoked Sardines in Extra Virgin Olive Oil
Jose Gourmet sources small mackerel off the coast of Portugal, selecting younger fish for delicate structure and clean flavor. The fish are pre-cooked before being packed with extra virgin olive oil and sea salt. This process softens the bone structure while allowing the oil to coat the fish. The recipe earned a British Great Taste award for technical execution and ingredient purity.
